simple savory sweet potato mash
a springboard off of which to bounce and grow your own creative ideas : a simple, savory, and slightly spicy mashed sweet potato perfect for weekday lunches
  • one small sweet potato, scrubbed
  • a knob of coconut oil or butter
  • pinch of ground chipotle
  • pinch of garlic powder
  • salt to taste
  • water as needed
  1. cook (boil, bake, or microwave) your sweet potato until tender.
  2. squeeze the flesh from the skin, if desired, or mash it in. mix in oil and seasonings with a fork, adding water as necessary for a satisfying consistency. enjoy.
I don't find that the water makes the mix taste watery. I love how vibrant and orange the mash is without the addition of a white liquid, too, although it's also delicious with coconut milk.
nix the garlic in favor of ground cinnamon for a totally warm and spicy treat. add honey or maple for extra somethin-somethin.
